Middle Eastern Kale Chicken salad and Roasty Crimini Mushrooms Recipe
Curry Chicken with Rice, Mushrooms, and a zesty kale salad. Delicious Balanced meal, perfect for Hormone health.
Start With The Chicken.
Ingredients - Chicken
Organic grass-fed chicken
Curry powder (i used a Trader Joe's one)
Olive or Avocado oil
Buy organic non-antibiotic chicken.
2. Wash and dry chicken.
3. Add curry powder, onion salt, pepper, salt, and paprika to the chicken breast, and you're done.
4. Add onto a hot skillet with the oil of your choice, avocado or olive oil are a great option
5. Add some lime and cook evenly on both sides with a lid top.
6. The chicken will be lightly crisp and almost a yellow slightly golden color once done.
Ingredients for the rice
Add water to a pot, put it on a boil.
Add rice and cover with a lid. (Once you can crush a grain of rice between your fingers, it means it is done.)
Strain the rice and serve on a plate.
Kale Salad Recipe
Trader Joe's "Goddess Dressing" or use my own Honey walnut dressing.
The honey walnut dressing recipe
Plain yogurt ( I used an almond yogurt)
Vinegar of choice, (it can be balsamic, apple cider. red wine vinegar, etc..)
Chop kale into chewable pieces and add to a bowl.
Chop some cilantro, and add to the bowl.
Add lime, pepper, chili flakes, onion, and garlic salt onto the kale.
Add the dressing.
Top off the salad with avocado
You are done!
Chop crimini mushrooms
Season with onion salt, pepper, salt, and paprika.
Add oil onto the same skillet you cooked your chicken and saute mushrooms.
Plate the mushrooms, your chicken, and kale salad, and you are finished!.
