Fluffy Coconut flour Probiotic pancakes

Pancake recipe for anyone wanting to eat healthy and delicious food.

Pancakes are such a delight.

This recipe is Gut-friendly, Sugar free and Paleo.


  • 1/4 cup coconut flour

  • 1 cup almond flour

  • 1 tablespoon of of collagen.

  • 1 tablespoon of cinnamon

  • 1/2 teaspoon baking soda

  • 3 eggs

  • 1/4 Yogurt ( I used Kefir, you can any type of Yogurt you would like)

  • 1/2 cup of almond milk

  • 2 tablespoons maple syrup

  • 1/2 teaspoon vanilla extract

  • 1 tablespoon oil



  1. Mix wet ingredients and dry ingredients in separate bowls.

  2. Combine wet ingredients with dry ingredients, add wet ingredients as you go, if your batter is looking crumbly or dry add more yogurt or kefir.

  3. Heat a skillet on medium heat, with oil and cinnamon.

  4. Add your batter to the pan.

The pancakes should be fluffy and thick.

Let them cool for a couple minutes, and enjoy.

Toppings Recipe : Bluberry compote & Maple syrup.

You can add whatever toppings you like this compote compliments the plate perfectly.


  • A cup of blueberries frozen or regular.

  • 1/2 teaspoon of coconut oil.


  1. Heat on saucepan on low heat,

  2. Add blueberries.

  3. Add coconut oil,

  4. Cook until blueberries start releasing their juices.

  5. Add your compote to the pancakes.

The blueberries will add a naturally sweet taste to this dish.
